I slept terribly last night and feel generally exhausted and awful today. Thus, I am bringing back my Three Good Things About Today, because thinking about how I feel awful all the time is boring and dumb. So!
Good Things about Today:
- I made pumpkin-peanut-butter soup (because fuck you, summer, I do what I want) for lunches this week and had it today with homemade bread and you guys, this is the best pumpkin soup ever, I will never make a different pumpkin soup recipe again.
Sautee the onion, garlic, and ginger in the oil over medium heat until the onion is softened. Add in the pumpkin and the broth and stir to combine. Bring to a boil, then reduce to a simmer and simmer for 20 minutes. Stir in the coconut milk, honey, and peanut butter. Add salt, pepper, and whatever other spices you like to taste - I put some garam masala in, but this would work with a lot of different things. Blend with an immersion blender (or other blender) until smooth, then eat!
- I have knitted almost the whole first skein of my sweater yarn and it's soft and very pretty. I'm very much enjoying how the different colors are coming out. (I will have pictures when I do finish the first skein.)
- I had forgotten that there was a special extra Critical Role episode on Friday but now I have been reminded and get to watch it tonight when I get home from work.

- 1 tbsp chopped ginger
- 1 15 oz can of pumpkin puree
- 2 cups chicken or vegetable broth (I used chicken)
- 1 13 oz can coconut milk
- 1-2 tbsp honey
- 1/4 cup peanut butter
- salt, pepper, and various spices to taste
