Today I bought a block of tamarind pulp for a recipe. Or rather, a intermediary recipe for the recipe I want to make, which is apple pie with carmelized honey and tamarind vinegar. Today, I made the tamarind vinegar. And after making the tamarind vinegar, I still have most of the block of tamarind pulp.

I have basically no experience cooking with tamarind. I have plans to make some pad thai but other than that, do any of y'all have recipes that include tamarind that you would recommend?

I love tamarind but have never cooked with it. I just consume it. Used to get a really good tamarind soda down in Tucson.

I'm not sure this'll help but tamarind.....paste? the stuff you get in jars. Anyway, it's amazing if you marinade salmon in it or just put it on top of salmon while it broils.

ETA: I used broil because I'm used to translating to American but I just realised I don't know if you're American or not. Cooked under the grill is how I'd say it.
