The weather has gotten warm here, which means switching from cold-weather vinegar beverages* to hot-weather vinegar beverages. So today, I am making my first switchel of the year!
Switchel has been around since the 1700s and is basically colonial-era Gatorade, except better tasting. It's lightly sweet, a little sour, a little spicy, and very refreshing. It's also super easy to make, so I figured I would share my recipe with you.
So. You get a quart/liter container - I have a liter jar that I use. Chop up about a thumb-sized piece of ginger and put it in the jar. Then add 4 tsp of apple cider vinegar and 4 tbsp of honey. (You can also use maple syrup. Molasses works okay but is very strong and will turn the drink dark brown. Karo syrup, for some reason, does not work at all. I assume stuff like agave nectar would work, but I haven't tried it.) Then fill the rest of the jar with warm water, shake vigorously to mix, and put it in the fridge for 6 to 8 hours. After that, you can strain the ginger out if you like, or leave it in to continue to get more gingery. Unlike all my other vinegar beverages, this one is pre-diluted for your convenience, so you can just drink it straight from the jar.
Alas, mine is now in the fridge and I cannot drink it till tomorrow.
*You can drink oxymels hot or cold but I tend to prefer them warm, so they are for winter.
