The thing I like about this cookbook (which is something Mom got from the library called Artisan Bread in 5 Minutes a Day) is that the whole idea is that you make a good bit of dough at one time and then you have it in the fridge and it keeps for a week or so. Right now, I have one loaf baking and enough dough for about three more loaves. If I want bread during the week, I take some out of the fridge, stick it in a loaf pan, let it rise a bit while the oven's heating up, and bake. And then I make more dough on the weekends.
That is a brilliant idea. Because homemade bread is awesome but it takes like four hours, what with rising and mixing and things. This means that I can basically make bread while eating breakfast in the morning and then have it for lunch.
Man, I am going to make so much bread. Even if the pumpernickel doesn't turn out to be proper pumpernickel, I can make white bread, and wheat bread, and there's an oatmeal bread recipe I want to try, and some kind of Portuguese corn bread, and cheddar bread, and...
See, this is why I would never make it on a low carb diet. 8)
