Had a pumpernickel bagel for dinner and I think that I've determined at least part of the problem.
I definitely need caraway seeds. They create the licorice-like flavor that was missing from my bread. (I also think that, next time, I'll up the cocoa and espresso powder too.)
That should at least make the bread taste different than run-of-the-mill brown bread.
