Today is baking day. I have made a shoo-fly pie, which is already out of the oven, and I have dough for pumpernickel bread rising on the counter. (I have left the kitchen so as to remove myself from the temptation to poke at the bread dough.) I very much hope this pumpernickel recipe works out better than the last one. The last one made a nice dark bread and all, but it didn't taste like pumpernickel. This one has cocoa and espresso powder in it, which the last one didn't, so I remain hopeful. If this one works out, I am going to keep it and make so much pumpernickel bread, OMG. And also I will adapt it to make pumpernickel bagels because they are hard to find around here - the only place that has them has very small ones and they are stupid expensive. Much better to make my own.

Since the pie is already out of the oven and I've made it before and am thus sure of it, I will share the recipe, which I found here. Shoo-fly pie is a Pennsylvania Dutch thing and thus is a regional food, so I'm not sure how many of you will have had the good fortune to be exposed to it. It is fabulous. It is also the second easiest pie I've ever made. (The easiest is buttermilk pie which is, essentially: "Put things in bowl. Mix. Pour into pie shell and bake. Eat.") Shoo-fly pie requires two bowls and the ability to boil water. 8) If you like molasses, you should totally try it.
